While blueberries are my go-to for this recipe, it’s incredibly forgiving and works exceptionally well with other berries too. Here in North Idaho, our ultimate favorite is to use fresh huckleberries – a regional delicacy with a distinct, sweet-tart flavor. However, I understand that huckleberries might be a bit challenging to source in other parts of the world, which is precisely why I chose to share the universally loved blueberry version with you today. Feel free to experiment with raspberries, blackberries, or even a mix of your favorite summer berries for a delightful twist!

These bars are truly simple to make and leave the most wonderful smell of baked blueberries drifting through the house. A perfect summer treat or a delightful snack anytime!

Ingredients

Crust & Topping

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 3/4 cup (1 1/2 sticks) butter, chilled

Filling

  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 6 tablespoons all-purpose flour
  • Pinch of salt
  • 1/4 teaspoon butter extract (optional, for enhanced butter flavor)
  • 1/2 teaspoon vanilla extract
  • 8-oz fresh blueberries, rinsed and drained

Instructions

For crust/topping:

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting, and lightly spritz with cooking spray. This prevents sticking and makes removal simple.
  3. In a medium bowl, combine the all-purpose flour, sugar, and salt for the crust mixture.
  4. Cut the chilled butter into 1/2-inch cubes and add them to the flour mixture.
  5. Using a pastry cutter or a fork, cut the butter into the flour mixture until it resembles coarse crumbs. This creates that wonderful crumbly texture.
  6. Carefully remove 3/4 cup of this crumb mixture to use as the topping later, and set it aside.
  7. Press the remaining crumb mixture firmly and evenly into the bottom of the prepared baking pan. Bake for 10-12 minutes, or until lightly golden.
  8. Allow the baked crust to cool for 10-15 minutes while you prepare the filling.

For filling:

  1. In another medium bowl (or use the same one after emptying the crust mixture), whisk the eggs until well combined.
  2. Add the granulated sugar, brown sugar, sour cream, the additional 6 tablespoons of all-purpose flour, a pinch of salt, butter extract (if using), and vanilla extract to the whisked eggs. Whisk everything together until the mixture is smooth and well-incorporated.
  3. Gently fold in the fresh (or thawed frozen) blueberries into the filling mixture. Be careful not to mash them.
  4. Pour the blueberry filling evenly over the partially cooled crust in the baking pan.
  5. Evenly sprinkle the reserved 3/4 cup of crumb mixture over the blueberry filling. This will form your delicious cobbler topping.
  6. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly and set. A toothpick inserted into the center (avoiding a blueberry) should come out mostly clean.
  7. Once baked, remove the pan from the oven and cool completely for at least 1 hour before cutting and serving. This allows the bars to set properly for clean slices.

  • Don’t Overmix: When combining the crust ingredients, mix just until coarse crumbs form. Overmixing can lead to a tough crust.
  • Fresh vs. Frozen Blueberries: Both work beautifully! If using frozen blueberries, there’s no need to thaw them beforehand. Just toss them directly into the filling mixture. They might release a bit more liquid, but it won’t affect the deliciousness.
  • Parchment Paper is Your Friend: Lining the baking pan with parchment paper makes lifting the cooled bars out of the pan incredibly easy, allowing for clean, neat slices.
  • Cool Completely: Patience is a virtue when it comes to these bars! Allowing them to cool for at least an hour (or even longer) ensures the filling sets properly, making them much easier to cut and serve without crumbling.
  • Enhance Flavor: A squeeze of lemon zest in the blueberry filling can brighten the flavors beautifully, adding a zesty counterpoint to the sweetness. A pinch of cinnamon or nutmeg in the topping can also add a warm, inviting spice.
