  • 1/2 cup water
  • 1 teaspoon pure vanilla extract
  • 3 large eggs, separated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup buttermilk

For the Rum-Infused Toasted Coconut Pecan Frosting

  • 1 cup pecans
  • 1 1/2 cups sweetened shredded coconut
  • 6 tablespoons unsalted butter, cut into pieces
  • 1 tablespoon dark rum (optional, but highly recommended)
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 3 large egg yolks

  2. To toast your coconut: Spread the sweetened shredded coconut evenly on a baking sheet. Place it in the oven under the broiler on high heat, watching it *very closely* to prevent burning. Allow the coconut to develop a nice golden color for 4-5 minutes, then stir them, bringing the untoasted coconut to the top. After the initial few minutes, it will cook much faster, so continue to watch carefully and stir frequently until you achieve a beautiful golden brown color and a wonderfully fragrant smell. Remove from oven and let cool. Reserve 1/2 cup of the toasted coconut for decorating the finished cake.
  3. Prepare the custard base: In a medium saucepan, combine the heavy cream, granulated sugar, and egg yolks. Stir continually over medium heat. It’s crucial to stir constantly to prevent scrambling the eggs. Continue cooking until the mixture thickens significantly and coats the back of a spoon. If you’re unsure, use an instant-read thermometer to confirm it has reached 170 degrees F (77 degrees C).
