Santa Munch Christmas Popcorn is an irresistible snack mix even Santa will love.

Ingredients

  • 8-10 cups popcorn. lightly buttered, popped and salted (homemade or microwave)
  • 1/2 cup white cake mix powder*
  • 16 ounces white chocolate, melted (or almond bark or candy melts)
  • 1/2 cup Christmas sprinkles
  • 1 cup holiday M&M candies

Instructions

  1. Prepare your workstation: Line a sturdy sheet pan with either parchment paper or waxed paper. This will prevent the popcorn from sticking and make cleanup a breeze after the chocolate sets.
  2. Combine and coat: In a large bag (a clean paper shopping bag works wonderfully, or a very large mixing bowl), place your freshly popped popcorn (ensuring all unpopped kernels are removed), the festive M&M candies, and the white cake mix powder. If using a bag, close it securely and shake vigorously for about 1-2 minutes until the popcorn and candies are well coated with the cake mix. If using a bowl, stir thoroughly with a large spoon or spatula. Note: The cake mix will adhere better if you use lightly buttered popcorn.
  3. Arrange and drizzle: Spread the coated popcorn and candies evenly in a single layer onto your prepared sheet pan. Melt the white chocolate (or almond bark/candy melts) according to package directions. Drizzle a little more than half of the melted white chocolate over the popcorn mixture. Gently toss the popcorn a few times with a rubber spatula to ensure even coverage. Immediately sprinkle half of your chosen Christmas sprinkles over the wet chocolate. Follow with the remaining melted chocolate drizzled over the top, and then scatter the rest of the Christmas sprinkles for a beautiful, festive finish.
  4. Cool, break, and enjoy: Allow the popcorn mixture to cool completely and harden for at least 30 minutes at room temperature, or for quicker setting, place it in the refrigerator for 10-15 minutes. Once hardened, gently break the popcorn into delightful, bite-sized pieces. Store any leftovers in an airtight container at room temperature to maintain freshness.   • We have made this with unbuttered popcorn and the cake mix did not stick as well, but it was still delicious.
  • We typically use 2-3 bags of microwave popcorn to achieve the desired volume.
  • *If you are concerned about consuming raw flour in the cake mix, you have a couple of options: you can either completely omit the cake mix from the recipe, or you can heat treat it first. To heat treat, microwave the cake mix powder on high for 1 minute and 15 seconds, making sure to stir it thoroughly at 15-second intervals to ensure even heating and to prevent burning. Let it cool before using.
