  • 1/2 cup Baileys Irish Cream
  • 2 cups white chocolate chips (Ghirardelli recommended for quality)
  • 1 teaspoon vanilla bean paste (or scrape 1/2 vanilla bean, or use 1½ teaspoon vanilla extract)
  • 1 (7 ounce) jar marshmallow creme
  • 10 ounces Dulce de Leche (or caramel sweetened condensed milk)

Instructions

  1. Line a 9-inch square pan with foil, ensuring some overhang on the sides. Lightly coat the foil with nonstick cooking spray for easy removal.
  2. In a medium saucepan, combine the granulated sugar, unsalted butter, heavy cream, and Baileys Irish Cream. Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, reduce the heat to just above medium-low. Attach a candy thermometer to the side of the pan (ensure it doesn’t touch the bottom) and continue to stir constantly for 7-10 minutes until the thermometer reads 235°F.   3. Immediately remove the saucepan from the heat. Add the white chocolate chips, stirring quickly and vigorously with a wooden spoon or heat-proof spatula until the chocolate has completely melted and the mixture is smooth and uniform. Then, add the vanilla bean paste (or extract) and the marshmallow creme. Mix thoroughly until all ingredients are well combined and the fudge is light and creamy.
  4. Pour the hot fudge mixture into the prepared 9-inch square pan. Gently tap the pan on the counter a few times to release any air bubbles and ensure an even surface. Set the pan aside on a wire rack to begin cooling.
  5. While the fudge is still warm, prepare the caramel swirl. In a medium-small glass bowl, heat the Dulce de Leche in the microwave for 15-20 seconds to soften it, making it easier to drizzle.
