IRISH CREAM CUPCAKES: A Decadent Delight

These Baileys Irish Cream Cupcakes offer an intense chocolate foundation beautifully complemented by subtle hints of Irish Cream and the sweet richness of caramel. The true magic, however, lies in their surprise center: a gooey pocket of chocolate caramel ganache that awaits discovery with every bite. This combination creates a sophisticated yet incredibly comforting flavor profile that elevates the humble cupcake to a gourmet experience.

My secret to achieving such a rich and flavorful cupcake base, even on a busy day, often starts with a quality cake mix. For this recipe, I transformed my favorite Dark Chocolate Fudge cake mix into something truly special. Instead of the typical water and oil, I substituted creamy milk, rich melted butter, and, of course, a generous splash of Baileys Irish Cream. This simple swap dramatically enhances the moisture, texture, and depth of flavor, making the cupcakes taste completely homemade and utterly luxurious.

While the cupcakes were cooling, I found myself multitasking, enjoying a creative escape by watching the captivating Glamour Photography workshop with the incredibly talented Sue Bryce on Creative Live. It was so inspiring, I ended up purchasing the full course to rewatch and absorb every detail – much like savoring every bite of these cupcakes!

Once the cupcakes were completely cool, the real fun began: creating their delightful secret center. I carefully used a sharp paring knife to cut a small, cone-shaped section from the top of each cupcake, setting the cake piece aside. This created the perfect cavity to generously fill with the luscious chocolate caramel ganache. After filling, the removed cake cone was gently placed back on top, sealing in the gooey surprise and ensuring a perfectly flat surface for frosting.

Next came the crowning glory: the fabulous Baileys Buttercream. Using a 1M icing tip, I piped a beautiful swirl of this rich and boozy frosting onto each cupcake. The Baileys-infused buttercream is not just incredibly smooth and easy to pipe, but its flavor perfectly complements the chocolate and caramel, adding another layer of sophisticated sweetness and a hint of the iconic Irish cream liqueur.

To add the final touch of elegance and indulgence, I warmed the remaining ganache in a decorator bag for a few seconds in the microwave to soften it, snipped a tiny tip off the bag, and artfully drizzled it over the buttercream. For an extra flourish, a swirl of caramel ice cream topping was added, creating a beautiful visual contrast and an extra layer of caramel goodness. These small garnishing steps truly elevate the visual appeal of these already stunning cupcakes.

Just in case you were curious, today marks my 17,167th day on this planet! It’s a joy to celebrate with such a delicious creation, and I genuinely wish I could share one of these incredible Baileys Irish Cream Cupcakes with each of you. If you don’t already have Baileys Irish Cream in your pantry, trust me, you’ll want to make a special trip to get some for these cupcakes. While they are undeniably ideal for St. Patrick’s Day—you could even swap the chocolate and caramel drizzle for vibrant green sprinkles to boost the festive spirit—their decadent flavor profile makes them a welcome treat for any occasion.

A huge thank you goes out to Amy from Living Locurto, who was kind enough to create the adorable “Happy Birthday” cupcake flags. Bailey's Chocolate and Caramel Cupcakes

Bailey’s Irish Cream Cupcakes with Chocolate & Caramel

Yield: 24 cupcakes

Prep Time: 25 minutes

Cook Time: 20 minutes

Additional Time: 25 minutes (for cooling and chilling)

Total Time: 1 hour 10 minutes

Ingredients

For the Cupcake

  • 1 Duncan Hines Moist Deluxe Dark Chocolate Fudge Cake Mix
  • 3 large eggs
  • 1/2 cup melted butter
  • 2/3 cup milk
  • 1/3 cup Bailey’s Irish Cream

For Chocolate-Caramel Ganache

  • 10 ounces bittersweet chocolate, finely chopped
  • 3.5 ounces caramels (about 10-12 candies unwrapped)
  • 1 cup heavy whipping cream

For Bailey’s Buttercream

  • 1 cup shortening
  • 1 teaspoon vanilla extract
  • 8 cups powdered sugar
  • 1/3-1/2 cup Bailey’s Irish Cream
  • 1/4-1/3 cup heavy whipping cream

For Garnish

  • Caramel syrup (for drizzling)
  • Remaining ganache (for drizzling)

Instructions

For the Bailey’s Chocolate Fudge Cupcakes:

  1. Preheat your oven to 350°F (175°C). Prepare your cupcake pans by lining them with paper cupcake liners.
  2. In a large mixing bowl, combine the cake mix, eggs, melted butter, Bailey’s Irish Cream, and milk. Mix on low speed until all ingredients are just combined. Then, increase the speed to high and beat for 2 minutes to ensure a smooth, well-aerated batter.
  3. Carefully pour the prepared batter into the paper-lined cupcake pans, filling each liner about two-thirds full.
  4. Bake for approximately 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Allow the cupcakes to cool completely on a wire rack before proceeding to the next steps. This is crucial for easy handling and proper ganache filling.

For Chocolate Caramel Ganache:

  1. Place the finely chopped bittersweet chocolate in a medium, heatproof bowl and set it aside.
  2. In a medium saucepan, combine the heavy whipping cream and unwrapped caramels. Heat over medium-low heat, stirring occasionally, until the caramels have completely melted and the mixture is smooth and well combined. Be careful not to let it boil vigorously.
  3. Pour the hot caramel cream mixture directly over the chopped chocolate in the bowl. Let it sit for a minute to allow the chocolate to melt, then stir gently with a whisk or spatula until the chocolate is fully melted and the ganache is smooth and glossy. Set aside to cool and thicken slightly.

For Bailey’s Buttercream:

  1. In a large mixing bowl, using an electric mixer, cream the shortening and vanilla extract together for 2-4 minutes until light and fluffy.
  2. Gradually add the powdered sugar, one cup at a time, mixing on low speed until incorporated before adding the next.
  3. In a separate measuring cup, combine the Bailey’s Irish Cream with the heavy whipping cream. Slowly add this liquid mixture to the sugar and shortening, beating until the buttercream reaches your desired consistency. Use more cream for a creamier, softer frosting, and less for a stiffer consistency suitable for intricate piping.

To Assemble the Baileys Irish Cream Cupcakes:

  1. Once the cupcakes are completely cool, use a sharp paring knife to carefully cut out a cone-shaped section from the center of each cupcake. Set these small cake pieces aside, next to their corresponding cupcakes.
  2. Fill the created cupcake holes generously with the cooled chocolate caramel ganache. The ganache should be thick enough to hold its shape but still pourable.
  3. Gently place the reserved cone-shaped cake pieces back over the ganache-filled holes, pressing down lightly to secure them.
  4. Using a piping bag fitted with your favorite icing tip (a 1M star tip works wonderfully), pipe a generous swirl of Bailey’s Buttercream onto the top of each filled cupcake.
  5. To garnish, place any remaining chocolate caramel ganache into a small decorator bag. Warm it gently in the microwave for about 10 seconds to soften if needed. Snip off a tiny tip from the bag and drizzle artfully over the buttercream. Finish with a drizzle of caramel syrup for extra appeal and flavor.
