Ingredients
- 10 flour tortillas – soft, pliable tortillas work best for easy rolling.
- 1 ½ cups vanilla yogurt – Greek yogurt can also be used for extra protein, or try other fruit-flavored yogurts for variation.
- 1-2 cups frozen berries – a mix of strawberries, blueberries, raspberries, and blackberries adds great flavor and color. Remember to cut larger berries like strawberries.
- 1/2 cup sugar – adjust to your sweetness preference.
- 1 tablespoon ground cinnamon – for that warm, aromatic touch that complements the fruit perfectly.
- Spray butter – helps the cinnamon-sugar stick and adds a nice flavor; regular melted butter can also be brushed on sparingly.
Instructions
- Begin by creating your delicious cinnamon-sugar coating. On a large, flat plate, thoroughly mix together the sugar and ground cinnamon until well combined. Take one flour tortilla and lightly spray one side with butter, ensuring the entire surface is covered. Immediately place the buttered side down onto the plate with the cinnamon and sugar mixture. Gently press down and move the tortilla around to fully coat one side with the flavorful blend. This step is crucial for adding that irresistible sweet and spicy crunch to each bite.
- Next, transfer the tortilla to another clean plate, with the cinnamon-sugar coated side facing down. Now it’s time for the creamy fruit filling! Spread approximately 1/8 cup of vanilla yogurt in a strip a little left of the center of the tortilla. You don’t need to be precise here; simply eyeball it. Then, generously sprinkle some frozen berries over the yogurt. I usually use a delightful mix of strawberries, blackberries, raspberries, and blueberries. A helpful tip: if you’re using strawberries, make sure to cut them into smaller pieces before freezing or before adding them to the tortilla, as whole frozen strawberries can be quite hard to bite into. Roll the tortilla tightly, starting from the side with the yogurt and berries, creating a neat, compact rollup. Place this seam-side down on a large sheet pan, ready for the freezer.
- Continue this simple and enjoyable process with the remaining tortillas, creating a lineup of beautifully filled rollups on your sheet pan. Ensure there’s a small space between each rollup to prevent them from freezing together, although they generally don’t stick too much. This makes it easy to grab and cut them later.
- Once all your tortillas are rolled and placed on the cookie sheet, carefully transfer the entire sheet to the freezer. Let them freeze for about 2 hours, or until they are firm enough to handle and cut easily. After they’ve thoroughly chilled and set, remove the roll-ups from the freezer. Using a sharp knife, cut each tortilla in half, creating two perfectly portioned pieces from each rollup. This size is ideal for snacking and makes them easier to eat. Finally, place all the cut rollups into a large zip-top bag, remove as much air as possible, and return them to the freezer for convenient storage. They’ll be ready whenever you need a quick, frosty treat!
Notes
To Serve: These rollups are best enjoyed directly from the freezer, offering a delightful frosty texture. You can let them thaw for just a minute or two if you prefer them slightly softer, but be cautious not to let them thaw too long, as they can become mushy. While still edible when mushy, the frozen experience is truly the best! They make an excellent grab-and-go breakfast or a refreshing treat on a warm day.
Variations & Customizations: The beauty of this recipe lies in its adaptability! Feel free to experiment with different flavors of yogurt and a variety of fruits. For instance, a combination of sliced strawberries and bananas would be absolutely delicious – just remember to cut the strawberries (and bananas, if they’re large) into smaller pieces before adding them, especially the strawberries, as a whole frozen strawberry is quite hard to eat. Other great fruit options include peaches, mangoes, or mixed berries. You can also try different flavored yogurts, like strawberry, peach, or blueberry, to match your fruit choices. For an extra layer of flavor, consider adding a tiny sprinkle of shredded coconut, a few mini chocolate chips, or a drizzle of honey before rolling. The possibilities are endless, allowing you to tailor these rollups to your personal taste!
