My journey with Pavlova began years ago, thanks to my mother who lived in Australia for a few years. She introduced me to this unique dessert during my teenage years, and ever since, the delicate balance of flavors and textures has held a special place in my heart. This particular recipe combines two iconic desserts into one spectacular treat: the classic Peach Melba and the beloved Pavlova. Peach Melba, traditionally a scoop of vanilla ice cream adorned with peaches and a tangy raspberry sauce, perfectly complements the meringue-style Pavlova. Both are staples of Australian cuisine, making their fusion a match made in dessert heaven.

Understanding the Magic of Pavlova: The Meringue Base

At the heart of any great Pavlova is a perfectly crafted meringue. While it might seem intimidating to novice bakers, I assure you, it’s far easier than it looks. The process involves gently beating egg whites with sugar, a touch of vanilla extract, cornstarch, white vinegar, and a tiny pinch of salt. These ingredients work in harmony to create a stable, airy foam that will transform into the characteristic crisp shell and soft, marshmallowy interior we all adore.

The key to success lies in achieving those “nice high peaks” and a beautiful sheen in your meringue mixture. Now for the most crucial step: the “baking” process. Unlike traditional cakes, Pavlova isn’t truly baked in the conventional sense; rather, it’s slowly dried out at a very low temperature. Place your meringue into a preheated 180°F (approximately 82°C) oven for two hours. After the two hours, simply turn off the oven and let the Pavlova remain inside for several more hours, or even overnight, with the oven door slightly ajar. Peach Melba Pavlova Recipe

Ingredients

For the Pavlova Meringue

  • 4 large egg whites, at room temperature
  • A pinch of salt
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract

For the Topping

  • 2-3 fresh ripe peaches, sliced (or 1 can, drained)
  • 1 cup fresh raspberries
  • Raspberry sauce for drizzling (store-bought or homemade)

For the Chantilly Whipped Cream

  • 1 pint (2 cups) heavy whipping cream, chilled
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare Your Oven: Preheat your oven to a very low 180°F (82°C). This low temperature is crucial for drying the meringue, not baking it.
  2. Prepare Your Pan: Line a large baking sheet with parchment paper. If you want a perfectly round pavlova, use a dinner plate to draw a circle (about 8-9 inches in diameter) on one side of the parchment paper with a pencil. Then, flip the parchment over so the pencil mark is on the underside (to prevent pencil residue on your meringue) and use it as a guide.
  3. Whip Egg Whites: In a very clean, dry mixing bowl (preferably glass or metal, as plastic can retain grease), add the room temperature egg whites. Using an electric mixer, whip on high speed until soft peaks form.
  4. Add Flavor & Stabilizers: Gradually add the vanilla extract, salt, cornstarch, and white vinegar to the egg whites while continuing to whip on high speed. Slowly begin to add the granulated sugar, a tablespoon at a time, allowing it to fully incorporate after each addition.
  5. Check for Sugar Dissolution: Continue whipping until the meringue is glossy, thick, and forms stiff peaks. To ensure the sugar has fully dissolved and the meringue isn’t gritty, pinch a small amount between your fingers. It should feel smooth. If it’s gritty, continue whipping for a minute or two more.
  6. Shape the Pavlova: Gently spoon the meringue mixture onto the prepared baking sheet, spreading it out into the drawn circle. Create a slight indentation in the center, forming a “nest” for your toppings.
  7. Dry the Meringue: Place the baking sheet into the preheated oven. Bake (or rather, dry) for 2 hours.
  8. Cool & Crisp: After 2 hours, turn off the oven heat. Prop the oven door open slightly (you can use a wooden spoon to keep it ajar) and allow the pavlova to cool completely inside the oven for another 1 to 2 hours, or even overnight. This slow cooling prevents cracking and ensures a beautifully crisp exterior.
  9. Prepare Whipped Cream: When you are ready to serve, prepare your Chantilly cream. Ensure your mixing bowl and whisk attachment are well chilled for best results.
  10. Whip the Cream: Pour the cold heavy whipping cream into the chilled mixing bowl. Whip on high speed for about 1 minute until it starts to thicken slightly.
  11. Sweeten & Flavor: Slowly add the powdered sugar and vanilla extract to the cream while continuing to whip on high. Continue whipping until you achieve your desired consistency – thick, fluffy, and spreadable, but be careful not to over-whip, or it will turn into butter.
  12. Assemble & Serve: Carefully transfer your cooled pavlova to a serving platter. Spread a thick, generous layer of Chantilly cream over the meringue. Arrange the sliced peaches and fresh raspberries on top of the cream. Drizzle with raspberry sauce just before serving. Enjoy immediately!
