  • Frozen Hashbrown Potatoes: Opt for either shredded or diced hashbrown potatoes. It’s crucial that they are thawed completely before mixing to ensure even cooking and a perfectly uniform texture throughout the casserole.
  • Melted Butter: The butter adds a rich, decadent flavor and helps bind the ingredients together. If your hashbrowns are still cold, it’s best to mix the melted butter with the other wet ingredients first to prevent it from solidifying prematurely.
  • Onions, Chopped: Finely chopped onions infuse the casserole with a subtle, savory aroma and taste. For a fantastic time-saving hack, consider using frozen chopped onions; simply thaw them before adding to the mixture.
  • Sharp Cheddar Cheese, Shredded: The cornerstone of this cheesy delight! While hand-shredding cheese yields the best melting consistency and flavor, pre-bagged shredded cheese works perfectly well. Just be aware that anti-caking agents in pre-shredded varieties might slightly affect how smoothly it melts.
  • Sour Cream: This is where the creamy tang comes from, giving the casserole its signature richness and depth. If you’re looking for an alternative, Greek yogurt can be a wonderful substitute, offering a similar creamy texture with a slight protein boost.
  • Cream Of Celery Soup: A classic condensed soup that provides the essential creamy base and a hint of savory flavor. Feel free to experiment with other creamy condensed soups, such as cream of mushroom or cream of chicken, to tailor the taste to your preference.
  • Kosher Salt and Freshly Ground Black Pepper: These essential seasonings are crucial for enhancing all the other flavors, bringing balance and zest to every bite. Adjust to your personal taste.

How To Make Cheesy Hashbrown Casserole Without Cornflakes

While many recipes boast simplicity and ease, this cheesy hashbrown casserole truly stands the test of time. It has weathered decades of culinary experimentation, countless taste tests, and various reinventions, yet its fundamental appeal remains unchanged. The bottom line is its straightforward preparation, making it accessible to even novice cooks while consistently delivering exceptional results:

  1. Prepare Your Baking Dish: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or a non-stick cooking spray to prevent sticking and ensure easy serving.
  2. Combine All Ingredients: In a generously sized mixing bowl, combine all the thawed frozen hash brown potatoes, melted butter, chopped onions, shredded sharp cheddar cheese, sour cream, cream of celery soup, and your preferred amount of kosher salt and freshly ground black pepper. Using a sturdy wooden spoon or spatula, mix everything thoroughly until all the ingredients are well incorporated and the hash browns are evenly coated with the creamy, cheesy mixture.
  3. Transfer and Bake: Pour the hashbrown mixture into your prepared baking dish, spreading it out evenly to create a consistent layer. Cover the dish tightly with aluminum foil. Bake for an initial 30 minutes. After this time, carefully remove the foil and continue baking for another 30 minutes, or until the top is beautifully golden brown and the edges are bubbling enticingly.
  4. Cool and Serve: Once baked to perfection, remove the casserole from the oven. Allow it to cool slightly for about 10-15 minutes before serving. This brief resting period helps the casserole set, making it easier to scoop and ensuring the flavors meld together for an optimal tasting experience.

Recipe Notes and Tips

Achieving the perfect cheesy hashbrown casserole is simple with these helpful notes and tips:

  • Hashbrown Quantity Matters Less Than Type: Frozen hashbrowns come in various package sizes. Don’t fret too much over the exact weight; aim for a bag between 25-30 ounces. If in doubt, slightly more is always better for a richer casserole. Crucially, always opt for shredded or diced hashbrowns that are NOT pre-cooked for the best texture and absorption of flavors in this cheesy hashbrown recipe.
  • Thawing is Essential: For optimal results, it’s highly recommended to thaw your frozen hashbrowns overnight in the refrigerator. This ensures they cook evenly and integrate seamlessly into the casserole mixture without diluting the sauce.
  • The “Cold Hashbrowns” Trick: If your hashbrowns are still cold or even slightly frozen when you’re ready to mix, here’s a brilliant tip: combine all the other liquid and creamy ingredients (melted butter, sour cream, soup, cheese, seasonings) first, ensuring they are well blended. Then, gently stir in the potatoes. This method helps to distribute the flavors evenly and prevents the cold potatoes from chilling the melted butter too quickly.
  • Save Time and Dishes by Mixing in the Pan: Why dirty an extra bowl? I often find it’s a huge time-saver to mix all the ingredients directly in the baking dish itself. This not only streamlines the preparation process but also significantly reduces the amount of clean-up required afterward.
  • Embrace Frozen Chopped Onions: For a truly brilliant time-saving hack, especially when making “funeral potato” casseroles for large gatherings, utilize frozen chopped onions. They are pre-prepped, quick to use, and eliminate the need for any tear-inducing onion chopping, getting your casserole into the oven even faster.
  • Adjusting Seasoning: Always taste your mixture before baking (if safe to do so) and adjust salt and pepper to your preference. Remember, you can always add more, but you can’t take it away!

Storage and Reheating Hashbrown Casserole

This cheesy hashbrown casserole is so delicious, you might not have leftovers! But if you do, here’s how to store and reheat it to keep it tasting fresh and wonderful:

Refrigerate Leftovers: To properly store any leftover cheesy potatoes, transfer them into an airtight container. This will help maintain their freshness and prevent them from drying out. They can be safely kept in the refrigerator for up to 4-5 days, making them perfect for quick weekday lunches or dinners.

Effortless Reheating: When you’re ready to enjoy your hashbrown casserole again, simply spoon a serving onto a microwave-safe plate. Reheat in the microwave in 1-minute intervals, stirring occasionally, until it’s heated through to your desired temperature. For a crisper top, you can also reheat portions in a preheated oven or air fryer until warmed and slightly browned.

Freezing for Future Enjoyment: There’s absolutely no debate that a hashbrown casserole recipe, when prepared ahead of time and frozen uncooked, is just as delightful as one freshly made once it’s baked. This makes it an ideal dish for meal prepping or having a comforting meal ready to go. To freeze, assemble the casserole in a sturdy, disposable foil pan. Cover it tightly with a layer of aluminum foil, then an additional layer of plastic wrap to prevent freezer burn. Store in the freezer for up to three months. When ready to bake, thaw in the refrigerator overnight, then bake as directed. Don’t wait too long to enjoy this cheesy comfort dish – it’s a future you-time-saver!

Variations & Additions For Cheesy Hashbrown Casserole Recipe

While our family adores cheesy hashbrown casserole without cornflakes, you can certainly customize this versatile dish with a crunchy topping or other exciting additions. Explore these variations to make the recipe uniquely yours, adapting it to any palate or occasion:

  • Potato Choices Beyond Shredded: Don’t limit yourself to just shredded hashbrowns! You can experiment with cubed hashbrowns for a different texture, use potatoes O’Brien for added vegetables, or even layer uncooked seasoned fries or tater tots for a fun twist. For an incredibly resourceful option, repurpose leftover baked potatoes by dicing or mashing them slightly before incorporating them into the mixture.
  • Creamy Soup Alternatives: The original recipe calls for cream of celery soup, but this is a fantastic area for customization. Feel free to swap it out for cream of mushroom soup for an earthier flavor, cream of chicken soup for a more robust poultry note, or even broccoli cheddar soup for an extra cheesy, veggie-packed punch.
  • Add Protein for a Main Dish: Transform this beloved side into a hearty main course by integrating your favorite proteins. Cooked and shredded southwest chicken, crispy bacon bits, savory sausage crumbles, diced ham, or even sliced hotdogs can turn this casserole into a complete meal.
  • Explore Different Cheeses: Sharp cheddar is a classic, but the world of cheese is your oyster! Try white cheddar for a milder, more elegant flavor, colby jack for a beautifully marbled melty texture, gouda for a nutty sweetness, pepper jack for a subtle kick, Havarti for a creamy richness, or even softened cream cheese for an extra luxurious consistency. This is also an excellent opportunity to clean out your cheese drawer of any leftover bits and pieces!
  • Sneak in More Veggies: Boost the nutritional content and add vibrant colors with extra vegetables. Incorporate frozen peas, sautéed mushrooms, tender green beans, finely shredded carrots, a pre-mixed veggie blend, or diced broccoli florets. For a fresh finish, garnish with diced tomatoes or a sprinkle of fresh cilantro after baking.
  • Flavor-Boosting Sauces & Spices: Elevate the taste profile with a splash of flavor. Mix in red or green salsa for a Tex-Mex twist, a dollop of ranch dressing for a zesty creaminess, or a hint of liquid smoke for a barbecue-inspired depth. Don’t forget to consider a pinch of garlic powder, onion powder, or a dash of smoked paprika for extra savory notes.

Frequently Asked Questions

What can I use instead of cornflakes on cheesy hashbrown casserole?

There are so many fantastic options to add a delightful crunch to your cheesy hashbrown casserole, giving it that extra layer of texture without resorting to cornflakes! You could use seasoned or plain bread crumbs for a classic crispy top. Crushed potato chips, tortilla chips, Townhouse or Ritz crackers, or even saltines and pretzel chips all make excellent, flavorful alternatives. The best choice often depends on the overall meal and any other variations you might have incorporated. Consider the flavor profile you think will best complement your hashbrown casserole, whether it’s serving as a savory side dish or a satisfying cheesy company potato main course.

How many people does hashbrown casserole serve?

A standard 9×13-inch pan of this delicious hashbrown casserole typically yields approximately 12 generous servings, making it perfect for family meals or medium-sized gatherings. However, this casserole recipe is incredibly flexible and easy to scale up. You can effortlessly double or even triple the recipe, adjusting the pan size accordingly, to accommodate a much larger crowd. This makes it an ideal choice for large parties, potlucks, or holiday feasts where you need to feed many hungry guests.

Can I shred my own potatoes for funeral potatoes?

Absolutely, you can certainly shred raw potatoes to create your own homemade hashbrowns for this casserole recipe, often referred to as “funeral potatoes.” If you choose to do so, we highly recommend shredding the potatoes directly onto a cheesecloth or several layers of paper towel. This crucial step allows you to remove as much excess moisture as possible, which is key to preventing a watery casserole. Once shredded, mix them with the other ingredients relatively quickly to prevent the raw potatoes from oxidizing and turning brown. If you plan to make ahead and freeze an uncooked hashbrown casserole using homemade potato shreds, it’s a good idea to blanch them first. Simply immerse the shredded potatoes in salted, boiling water for just one minute, then immediately transfer them to an ice bath to stop the cooking process. Drain them thoroughly before incorporating into your casserole mixture.

  • 1 (10.5 ounce) can of cream of celery soup
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or non-stick cooking spray.

  • The exact amount of hashbrowns isn’t extremely important. They are sold in many sizes, so just try to get something between 25-30 ounces (I always err on the side of more). Just make sure they are shredded and NOT pre-cooked.
  • I pull my frozen hashbrowns out of the freezer and put them in the fridge to thaw overnight.
  • To save time and dishes, I always just mix the ingredients right in the baking dish, instead of a bowl.
  • Frozen chopped onions are a time saver.
  • Cream of celery soup can be substituted with cream of chicken or, cream of mushroom.
  • Great dish for large gatherings. Everyone loves them.
  • If I’m making these to take to a party, I make them in a heavy-duty foil pan so I don’t have to remember to bring my baking dish home. Makes for easy clean up too.
