  • 90 (3 sleeves) buttery crackers (I use Ritz Crackers)
  • 1/2 cup powdered sugar
  • 3/4 cup (1 1/2 sticks) butter, melted
  • 1 (12 ounce) can frozen orange juice concentrate, thawed
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 1 (8 ounce) container whipped topping, thawed

Instructions

  1. Lightly grease bottom of pie dish with cooking spray.
  2. In a food processor, add crackers and powdered sugar. Pulse until you have fine crumbs.
  3. Using a medium bowl, combine melted butter and cracker crumbs. Mix until well combined. Test crust mixture to make sure it will hold together: using your fingers, pinch the mixture together; if it clumps, it’s done. If it doesn’t hold together, add ½ -1 tablespoon more melted butter at a time until mixture holds together. Set aside about 3/4 – 1 cup of crust for topping.
  4. Press remaining crust mixture evenly into the pie dish and set aside.
  5. Using a large mixing bowl, combine thawed orange juice concentrate, sweetened condensed milk, vanilla extract, and a pinch of salt. Stir until thoroughly combined.
  6. Gently fold in the thawed whipped topping until the mixture is smooth and evenly blended.
  7. Pour the delicious orange creamsicle mixture over the prepared crust. (Note: Depending on the size of your pie dish, you may have extra mixture. Don’t let it go to waste! Set it aside and use for delightful parfaits or as a creamy dip.)
  8. Evenly sprinkle the reserved cracker crust crumbs over the top of the pie.
  9. Place the pie in the freezer to set for a minimum of 4 hours before serving. For best results and a firmer slice, freezing overnight is even better. Store any leftover dessert covered securely in the freezer.
