Master the Art of Cutting a Whole Chicken: Save Money and Cook Better
For countless delicious recipes, a perfectly cut-up whole chicken is essential. Yet, a quick trip to the grocery store reveals a common dilemma: pre-cut chicken comes with a premium price tag. Why pay extra for convenience when you can easily master the skill of cutting a whole chicken at home? Not only does it significantly cut down on your grocery bill, but it also gives you greater control over the size and quality of your chicken pieces, ensuring fresher, more flavorful meals.
Learning this fundamental kitchen skill is more straightforward than you might think. Imagine the satisfaction of transforming a whole bird into individual pieces, ready for your favorite dishes, all while keeping more money in your pocket. This guide will walk you through the process, inspired by expert techniques, and culminate in a truly mouth-watering recipe that perfectly utilizes your freshly cut chicken.
Unlock Savings and Culinary Confidence: The Benefits of Home Chicken Butchery
The financial advantage of buying a whole chicken over pre-cut packs is undeniable. Grocery stores often charge a convenience fee for the labor involved in butchering, which can add significant cost over time. By purchasing whole chickens, especially when they are on sale, you can drastically reduce your meat expenses. But the benefits extend far beyond just saving money.
When you cut a chicken yourself, you gain complete control. You can decide on the precise cut for each piece – whether you need whole breasts, deboned thighs, or perfectly sized drumsticks. This customization is invaluable for recipes that call for specific cuts or for adapting to your family’s preferences. Furthermore, handling the chicken from its whole form ensures maximum freshness. You know exactly when and how it was processed, giving you peace of mind about the quality of your ingredients. It’s also an empowering experience, adding a valuable skill to your culinary repertoire that builds confidence and connection to your food.

The Full Recipe: Cumin Chicken with Black Bean Stuffing
Cumin Chicken with Black Bean Stuffing
This vibrant Cumin Chicken with Black Bean Stuffing, inspired by Chef Jeffrey Saad, is a celebration of bold flavors. Juicy chicken pieces are seasoned, glazed with a cumin-agave syrup, and grilled to perfection. Served alongside a hearty, smoky black bean stuffing featuring roasted chiles and charred corn tortillas, this dish is a crowd-plepleaser perfect for any gathering. It’s an unforgettable meal that balances spice, sweetness, and savory satisfaction.
Ingredients
For Chicken:
- 5 pounds whole chicken or equal amount skin-on chicken pieces, rinsed and patted dry
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 2 teaspoons canola oil
- 1 tablespoon cumin seed
- 3 tablespoons agave syrup or honey
For Stuffing:
- 1 each green pasilla chile*
- 1 each jalapeño pepper*
- 4 each corn tortillas (6 inch)
- 1 can (15 ounces) black beans, drained and rinsed (I prefer BUSH’S®)
- 1/4 cup chicken stock
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon kosher salt
- 1/4 cup fresh cilantro, chopped
- 6 wedges of lime
Instructions
- Season chicken pieces with salt and pepper, then lightly coat with canola oil. In a separate small bowl, mix the cumin seeds with agave syrup or honey and set this glaze aside.
- Prepare your grill: Set one side to medium-high heat and the other to medium-low heat. Ensure the grill grates are clean and well-oiled. Once the grill is hot, use tongs to place the chicken pieces skin-side down on the hot side of the grill. Cook for about 5 minutes, or until you achieve beautiful grill marks. Flip the chicken (skin-side up), move it to the cooler side of the grill, close the lid, and continue cooking. Breast meat typically needs 3-5 minutes more, while bone-in leg/thigh meat requires about 12 minutes.
- During the final two minutes of cooking, brush both sides of the chicken pieces generously with the reserved cumin/agave syrup mixture. Cook each side for one minute to caramelize the glaze. The chicken is done when its internal temperature reaches 160 degrees F.
- Carefully remove the chicken from the grill. Allow it to rest for at least 10 minutes before serving. This resting period helps the juices redistribute, resulting in more tender and flavorful chicken.
- For the Stuffing: Using metal tongs, blacken the pasilla chile and jalapeño peppers directly on the grill for approximately 3 minutes per side until their skins are charred. Transfer the blackened peppers to a small bowl, cover tightly with foil, and let them steam for 10 minutes. Once cool enough to handle, gently wipe off the charred skin (do not rinse under water to preserve flavor). Discard the stems and seeds (unless you prefer extra spice). Chop the deseeded chile and jalapeño into ½-inch pieces and set aside.
- Using metal tongs, place the corn tortillas directly on the grill for 30 seconds per side, or until they are slightly charred and softened. Remove from the grill and chop the tortillas into ¾-inch strips.
- In a medium-sized grill-safe pan, combine the drained and rinsed black beans with the chopped chile, jalapeño, tortilla strips, chicken stock, smoked paprika, and ¼ teaspoon salt. Place the pan directly on the grill (on the cooler side or over indirect heat) and heat just until the mixture comes to a boil. Remove the pan from the grill and set it aside to cool briefly.
- To serve, arrange the perfectly cooked cumin chicken pieces alongside a generous portion of the warm black bean stuffing. Garnish with fresh cilantro and lime wedges for a burst of freshness and acidity.
Notes
*Substitution: For convenience, you can use ½ cup of canned roasted green chiles in place of fresh green pasilla chile and jalapeño pepper.
