Kitchen Tips For Success

  • Use sturdy bread. Brioche, sourdough and challah are excellent choices, as they hold their shape in the egg mixture and resist getting soggy.
  • Short on time, but can’t wait to make this French toast bake? Instead of letting the bread sit out, just pop it in a 275° F oven for 10-15 minutes. This will prevent soggy french toast.
  • Assembling it ahead gives the bread time to soak up the egg custard for a perfectly flavorful breakfast bake. If you can put it together the night before the flavors will have had time to meld beautifully.
  • Make sure to choose pumpkin puree and not pumpkin pie filling.
  • If you can put it together the night before and wait until the next morning to make it, the flavors will have had time to meld beautifully.

Variations or Additions

  • Spices – Use your own blend of warm spices. Try nutmeg, allspice, ground ginger, or cloves.
  • Flour – Replace the all-purpose flour with a 1:1 gluten-free substitute.
  • Extract – To add nutty flavor, try using almond extract instead of vanilla.
  • Creaminess – If you want to make this dish a little creamy, add 8 ounces of cream cheese, cubed with the bread.
  • Glaze – Make a powdered sugar glaze to drizzle over the streusel (2 cups powdered sugar +3 Tbsp milk)
  • Milk – Use 2% or whole milk for the recipe. If you prefer a nondairy alternative, you can substitute with coconut milk, soy milk, oat milk, or almond milk.
